Sweet tartlets are essentially mini-tarts or the same pastry baskets, but larger in size. We prepare the dough for strawberry tartlets according to the classic scheme, as well as the custard.

For the dough, mix all dry ingredients in a bowl. Add cold butter, cut into small cubes. Using the paddle attachment, mix into crumbs.
Break the egg into a small bowl. Beat until smooth and divide in half, or better yet, measure out 25 g. Use the rest as you wish. Add the egg and vanilla seeds to the prepared mixture. Stir quickly until ingredients are combined.
Roll out the dough between two sheets of parchment into a thick layer and refrigerate for 6 hours.
Take out the dough and roll it out, turning it over from time to time, to a thickness of 2-3 mm. Cut out circles with a diameter of 8–10 cm. Place them in heatproof molds with a diameter of 6–7 cm. Press the sides and trim the edges of the dough. Place the preparations in the refrigerator for 1 hour.
Prick the pieces with a fork. Bake in an oven preheated to 180°C for 10–12 minutes. Cool completely.
For the cream, remove the butter from the refrigerator in advance. Place the yolks in a saucepan, add regular and vanilla sugar and starch. Pour in 100 ml of milk and mix thoroughly with a whisk until smooth. Pour in the remaining milk and bring to a boil. Cook, stirring, until the cream thickens, 5 minutes. Remove the saucepan from the heat and stir the pieces of butter into the cream. Transfer to a glass bowl and cover with cling film in contact. Cool the cream and put it in the refrigerator for 1 hour.
Fill the baked tartlets with cream to the brim. Cut the strawberries into beautiful slices and place on the cream. Garnish with grated lime zest and serve.
