Even children who categorically refuse to eat fish agree to fish sticks. To avoid feeding them store-bought semi-finished products, make the sticks yourself. The best thing about this dish is that you can do most of the work in advance or even prepare a large batch and freeze it.

Pat the cod fillets dry with paper towels. Cut the fish into strips 2–2.5 cm wide. Pour flour into a plate, add salt and pepper. Place breadcrumbs in another bowl and beat eggs with a pinch of salt and pepper in a third bowl.
Dredge fish slices in flour, dip in eggs and coat in breadcrumbs. Lightly press the breading onto the fish. Place fish sticks on a cutting board in 1 layer, cover with cling film and refrigerate for 30 minutes.
Heat olive oil in a large skillet over medium heat, 1 minute. Arrange the fish fingers, leaving some space between them. Fry the sticks for 2 minutes on each side.
Using a paring knife, cut the carrots and cucumber into long ribbons. Place fish fingers on plates, add vegetables and serve immediately.
