Yeast dough fritters are a delightful treat from childhood. They turn out perfect, incredibly "fluffy," tender, and airy, all thanks to the yeast dough. The fritters are fried in a deep skillet or saucepan with plenty of vegetable oil, essentially deep-fried. Because every decent fritter must have a crispy crust. You may ask, how do fritters differ from regular doughnuts? Essentially, only by name. Simply put, this pastry is called fritters by the residents of St. Petersburg, who will always show you the best fritter places in the northern capital. And maybe they'll even share their recipe. Melt and cool the butter. Heat the water to 30–35°C. Whisk the eggs until the white and yolk are combined. Add flour, dry yeast, salt and sugar into a large bowl. Add eggs and melted butter, pour in warm water. Knead a soft dough, cover the bowl with cling film and leave to rise for 1 hour.
Punch down the dough and cover again with film. The dough will be quite soft and sticky. Leave the dough warm for another 30 minutes. Punch down the dough again.
Grease the work surface with vegetable oil, remove the dough from the bowl and divide into pieces the size of a chicken egg. Using hands greased with vegetable oil, form balls, cover with a towel and leave on the work surface for 20–30 minutes.
Pour vegetable oil into a large deep frying pan and place over medium-high heat. Heat the oil to 160°C. This will take approximately 3-4 minutes.
During proofing, the dough balls will increase in volume. Using your hands, make a hole in the center of each and immediately lower into the hot oil. 3-4 crumpets will fit in the pan.
Fry the crumpets until golden brown, about 30–40 seconds. Carefully turn over and cook for another 30 seconds. The donuts brown very quickly. To remove excess oil, place the finished crumpets on a plate lined with paper towels. Continue frying the crumpets until the dough is gone. Before serving, sprinkle the crumpets generously with powdered sugar.
