The fact is that the ingredients of this dish "turn into" soup with the help of ordinary chilled water! Is this possible when it comes to okroshka? Strangely enough, yes, because the essence of this soup is to combine finely chopped vegetables with a cold liquid. So, specifically, kvass is not a must. Therefore, if you make okroshka with mayonnaise, your loved ones might even prefer it over the traditional version. Prepare the base for okroshka with mayonnaise. Boil 2 liters of water and let cool completely. Hard boil the eggs (10 minutes). Boil potatoes in their skins until tender and cool.

Peel the potatoes for okroshka, then cut into small cubes. To make them more accurate, let the tubers cool thoroughly. To do this, it is better to put them in the refrigerator.

Cool the eggs for okroshka under running water. Then peel and finely chop. Pour into a large bowl. Place the previously diced potatoes into it.

Cut doctor's sausage for okroshka into small cubes. You can use Russian or other boiled sausage, but low-fat doctor's sausage is better. Place the sausage in a bowl with the potatoes and eggs.

Wash cucumbers and greens and dry with paper towels. Cut the cucumber lengthwise into 2 parts and cut into small slices. Remove coarse sprigs of greenery, finely chop the rest.
