About This Recipe

Salad with beef steak and apricots might surprise someone: why add fruits to a meat salad? But taste – it's a delicate matter. Spicy "brutal" meat and tender sweet apricots feel great together in the same dish. It is thanks to this amazing combination that the salad turns out incredibly juicy and aromatic. The soft steak, cut into thin slices, literally absorbs all the juices of the apricot, fresh cucumber, and greens. Add a bit more dressing, also quite unusual, and you get an absolutely exquisite treat for the festive table. True gourmets will be pleased. By the way, the salad with steak and apricots can be served as a side dish to baked or boiled potatoes or as a standalone dish.

Step 1

In advance, at least 1 hour before cooking (or up to 24 hours), rub the steak with salt, pepper and olive oil. Wrap in film. You can leave it at room temperature for up to 2 hours; for longer, put it in the refrigerator.

Cut the apricots lengthwise, remove the pits, and cut the pulp into thin slices. Cut the cucumbers into slices, add to the apricots, pepper, sprinkle with lime juice, sprinkle with zest, and leave to marinate while everything else is prepared.

Place a grill pan over medium heat; there is no need to add oil, it is already on the meat. Preheat the pan, but do not get it hot. Place the steak and fry, turning once every 1.5 minutes, until the desired degree of doneness (it is advisable not to fry completely, let the meat remain at least pink inside).

Transfer steak to a board and let cool, 10 minutes. Then cut into thin strips across the grain. Drizzle with olive oil and pepper.

Mix the mustard with apricot jam and mustard, adding a couple of tablespoons of water to make the dressing less thick. Add some salt. Add Tabasco if desired.

Place lettuce leaves on plates and drizzle with dressing. Place apricots and cucumbers on the leaves and place strips of steak between them. Drizzle with dressing and serve.
