Fried asparagus with cheese and ham is an exquisite appetizer or a complete hot dish for a light dinner with a glass of white wine. The asparagus season comes in spring. This vegetable has many beneficial properties. Depending on the method of cultivation, asparagus can be green, white, or purple. The color of the asparagus is influenced by the amount of light it receives during growth. For this recipe, crispy green asparagus or its purple version is the most suitable. Thin asparagus does not need peeling, but for thick asparagus, it will be necessary not only to break off the tips but also to process the surface of the stems with a vegetable peeler.

Step 1

For the sauce, finely chop the onion. In a wide saucepan, melt the butter over medium heat and sauté the onion until translucent, 3 minutes. Add flour and cook, stirring often, 1 minute.

Pour milk into the saucepan. Stirring constantly, bring the sauce to a boil. Reduce heat to low and cook for 5-7 minutes. Remove the saucepan from the heat and puree the sauce with an immersion blender.

Finely grate the cheddar, add to the sauce and stir until completely melted. If necessary, return the saucepan to low heat for 1-2 minutes. Cut the ham into thin strips and stir into the sauce.

Break off the woody ends of asparagus, 1.5–2 cm long, and remove the outer skin from the stems. Heat vegetable oil in a frying pan, add asparagus, add a little salt and fry for 3 minutes on each side. Transfer to a platter, pour over the sauce and sprinkle with grated Parmesan.
