Battered apricots with mango sauce are an entirely unconventional combination that will delight connoisseurs of original desserts. Let's not say that the recipe for this sweet masterpiece is simple: some effort will be required. But the result will definitely meet your expectations. Fried battered apricots, pre-marinated in orange juice with cinnamon, are simply marvelous! The dessert preparation technique involves deep-frying the fruits; otherwise, the batter won't become crispy. But that's not all. We need a final touch—the mango sauce. It will add extra sweetness to the fragrant apricots and simultaneously freshness, creating an interesting contrast in flavor. Now you can gather everyone around the tea table and enjoy the wonderful fruits, including the fruits of your own labor.

Orange juice - 250 ml
Juiced lime - 20 g
Cinnamon - ½ tsp
Powdered sugar - to taste

Baking powder for the dough - 20 g

Warm the milk. Melt the butter.
In a bowl, mix flour, baking powder, sugar and a pinch of salt. Separate the whites from the yolks. Beat the yolks, set aside the whites.
Add the yolks, milk and melted butter to the bowl with the flour mixture. Gradually pour in the beer, mix well and leave for 2 hours at room temperature.
Cut the apricots in half and remove the pits. Place in a bowl and cover with orange juice, sprinkle with cinnamon and leave to marinate in the refrigerator for 30 minutes.
Peel the mango and cut the pulp into small cubes. Remove apricots from marinade. Pour half of the marinade into a saucepan and simmer a little over low heat. Mix with lime juice and a quarter of the mango and puree in a blender. Add the rest of the mango and stir.
Heat the frying oil in a saucepan to 170°C. Beat the egg whites to soft peaks and add to the batter.
Pat the apricots dry with paper towels. Dip the apricot into the batter and deep-fry for 4 minutes. Drain on paper towels. Dust the apricots with powdered sugar and serve with the mango sauce.
