Strudel with strawberries and ice cream is a true delicacy that is worth the time and effort. The dough for a proper strudel is rolled out very thinly and then stretched by hand until it becomes very thin, almost transparent. Because of this, the finished strudel turns out to be very tender with alternating layers of dough and rich filling. The most famous strudel recipe is made with apples, and in our recipe, caramelized apples serve as the base for the filling, complemented by fresh strawberries, lemon zest, and cookie crumbs, which absorb the released juices and prevent the dough from becoming too soggy during the cooking process.

For the dough, grate 40 g of cold butter. Sift 240 g of flour into a large bowl, add butter, egg, sugar, salt and knead the dough. While kneading, pour 1-2 tbsp into the bowl. l. hot water until you have a soft and pliable dough. Form the dough into a ball, cover the bowl with cling film and leave in a warm place for 1 hour.
Prepare the filling. Cut the apple into small cubes, place in a saucepan, add sugar and fry over medium heat for 3-4 minutes. The sugar should caramelize. Remove from heat and cool.
Cut the strawberries into 2–4 parts. Using a fine grater, remove 1 tsp. lemon zest, squeeze the juice from half a lemon. Place the cookies in a Ziploc bag and crush into fine crumbs with a rolling pin. You can grind the cookies using a blender in pulse mode.
Preheat oven to 180°C. Line a baking tray with baking paper. Place a large kitchen towel on a work surface and sprinkle with the remaining flour. Roll out the dough on a towel into a thin layer, and then stretch it with your hands, starting from the center. The dough layer should become translucent.
Mix prepared apples with strawberries, lemon zest and juice. Sprinkle the dough with cookie crumbs and arrange the fruit filling. Lifting the fabric, roll it up and transfer it to a baking sheet. Brush with remaining butter. Bake the strudel for 45 minutes, transfer to a wire rack and cool completely. Dust with powdered sugar, cut into portions and serve with ice cream.
