Baked peppers with stracciatella is a vibrant appetizer with a balanced flavor. The combination of slightly charred sweet peppers (a light grilling adds a smoky aroma), tender creamy stracciatella, a rich sauce made from lemon juice, olive oil, and garlic, crispy dried fried onions, and finely chopped greens is so summery! This appetizer is great to serve on a hot day with chilled white wine or homemade lemonade with mint or tarragon.

Sweet red pepper - 4 pcs.
Stracciatella cheese - 240 g
Garlic - 2 clove
Parsley - 2 bunch
Dried fried crispy onion - 2 tbsp.
Extra virgin olive oil - 4 tbsp.
Lemon juice - 1 tbsp.
Salt - to taste
Freshly ground black pepper - to taste

Cut the bell pepper lengthwise, remove the seeds and membranes. Salt the halves, sprinkle with black pepper and brush with 1 tbsp. l. olive oil. Preheat the grill and place the pepper halves cut side down on the grill. Roast the peppers for 5 to 7 minutes until the cut sides are lightly charred. Flip the halves and continue baking for another 5 minutes.
Prepare the sauce. In a small bowl, combine the remaining olive oil, pressed garlic and lemon juice, add salt and whisk.
Transfer the peppers to a platter and pour over half the sauce. Leave for 5 minutes to lightly marinate the peppers. Spread the stracciatella on the peppers, add the remaining sauce and sprinkle with dried onions and finely chopped herbs.
