Prepare the sorbet. Peel the cucumbers, cut lengthwise and remove the seeds. Cut the pulp into small pieces. Combine cucumbers with sugar and lemon juice and puree in a blender until smooth.
Place the cucumber mixture in a container with an airtight lid and place in the freezer for 1 hour. Stir the mixture with a fork, breaking up the ice crystals, and return to the freezer. Continue stirring the sorbet every 30 minutes for 4-6 hours. You can also prepare sorbet in an ice cream maker according to the instructions.
Place lime slices in a highball glass, pour in the sugar syrup and crush with a long spoon. Pour in the rum and soda, stir and remove the lime. Using a special spoon, form small balls from the cucumber sorbet and fill the glass to the top. Garnish with a cucumber slice and mint leaves and serve immediately.
