Stolichny Salad Classic - a simplified version of Olivier, which was first presented by the chef of the Moscow restaurant in 1939. By that time, it was practically impossible to obtain game birds, capers, and other crayfish tails, but the desire to create something similar to the famous salad was strong. Thus, Stolichny Salad came into existence, comprising potatoes, carrots, cucumbers, eggs, peas, and boiled tongue, intended to upgrade the dish to a restaurant level. However, other chefs advocated for an even cheaper version and subsequently introduced chicken into the recipe, but that's on their conscience. We, on the other hand, offer you the opportunity to get acquainted with the classic version of Stolichny Salad, which you are sure to enjoy.

Prepare your tongue for the classic Stolichny salad. Wash thoroughly and place in a saucepan. We suggest boiling the whole tongue, and using only a part for the salad - weighing 400 g. The rest can simply be cut into thin slices and served as a cold appetizer. Fill the tongue with water, put on the fire and bring to a boil. Skim off the foam. Cook the tongue for 3 hours over low heat. Let cool and peel. Cut off the portion intended for preparing the salad.
Wash the potatoes and carrots for the Stolichny salad thoroughly with a brush and cook until tender. Let cool, then peel. Hard boil the eggs (about 10 minutes). Let cool and peel as well.
Peel the onion and chop finely. Wash the apple, cut in half and remove the core and seeds. Cut the pulp into small cubes. Also cut pickles, potatoes, carrots, eggs and cooled tongue.
Place all prepared Stolichny salad ingredients into a large bowl. Add the canned peas and stir gently with a spatula.
Add mayonnaise, salt and pepper to taste. Stir. Place the classic Capital salad in a salad bowl, decorate as desired and serve.
