If you love strawberries, now is the perfect time to indulge in the taste of summer berries and prepare toasts with ricotta and strawberries. This appetizer, with a recipe reminiscent of Mediterranean-style dishes, combines the flavors of sweet juicy berries, creamy cheese, and spicy basil in a whimsical and organic way. Beautifully arranged on toasted bread, it will impress everyone with its appearance and aroma. Of course, if you are lucky enough to get perfectly ripe strawberries — such berries, especially when paired with delicate ricotta, can make any dish perfect. For a buffet, you can make the toasts canapé-sized, so they are easy to eat. And if you have enough time for cooking, make the base from puff pastry. Cut the ready-made dough into squares of the desired size and bake them in the oven.

Preheat oven to 190°C. Remove the sepals from the strawberries. Cut large berries into 2–4 parts, leave small ones whole. Dry the bread slices in the toaster. Separate the basil leaves from the stems.
Place the berries in a large heat-resistant dish, pour 2 tbsp. l. liquid honey, add a pinch of salt and vanilla sugar, mix gently. Place the pan with the berries on the middle rack of the oven and bake for 20 minutes.
Spread the toast with ricotta and arrange the baked berries. Garnish with basil and pour over the syrup from the mold and the remaining honey.
