The Germans really love pork knuckle in beer with stewed cabbage. In Germany, this dish is called Eisbein and is made with white cabbage, which we replaced with red cabbage. The beer broth in which the knuckles were simmered can be frozen and used as a base for sauces and soups.

Season the pork shanks generously with salt and pepper, roll in flour and fry in a very hot frying pan in vegetable oil on all sides until golden brown.
Cut the onion, carrots and celery into large cubes and fry in a deep saucepan in vegetable oil along with thyme, 5-7 minutes. Add chopped tomatoes, tomato paste and stir-fry for 2-3 minutes.
Pour in beer and 2 liters of water, add mustard, salt and pepper, and bring to a boil over high heat. Place the shanks into the resulting sauce; they should be completely covered with liquid; if not, add water. Reduce heat to low and simmer the meat for 2–2.5 hours, covering with a lid. The meat should be easily pierced with a skewer. Remove from heat and set aside for 8–12 hours.
For garnish, chop the cabbage, cut the apple into small cubes, mix everything in a deep saucepan. Add sugar, beer, spices and simmer over medium heat, stirring occasionally, for 40–50 minutes. Serve the shank with stewed cabbage.
