A thick and hearty turkey soup with barley and vegetables is the best option for a full-fledged lunch or dinner. The principle of making a tasty and healthy soup is simple: take plenty of vegetables, some grains, and diet meat – and you have a wonderful homemade first course on the table. We chose turkey fillet and barley for our soup, but you can come up with your own version. For example, try using quinoa and chicken, rice and fish, bulgur and beef. By the way, a vegetarian option with fried tofu and lentils will also be interesting and very nutritious. Just add more spices in this case – for a vibrant flavor.

Step 1

Soak pearl barley in cold water for at least 3 hours.

Peel and chop the garlic. Cut the turkey fillet into 1 cm cubes and place in a bowl. Add garlic, paprika, salt and pepper, pour in 1 tbsp. l. olive oil and mix well. Leave to marinate for 30 minutes.

Peel all vegetables and cut into small cubes.

Heat a little olive oil in a saucepan over medium heat. Add onion, carrots and celery and cook, stirring, for 5 minutes. Add the zucchini and tomatoes and continue cooking for another 3-4 minutes. Pour in the broth, add pearl barley and dried basil and bring to a boil. Reduce heat and simmer soup, stirring occasionally, until barley is soft, about 25 minutes.

Add the turkey cubes to the soup and continue to cook for another 5-7 minutes. Season with salt and pepper and add spinach. Cook for 3 minutes. and remove the pan from the heat.

Pour the soup into bowls and add pesto or sour cream.
