About This Recipe

Cornbread with cheese would be more accurately and precisely called a "savory cake." The recipe and method of preparation (in the oven, in a cake pan) should leave no doubt about that. But this corn-based pastry looks like bread, and the appetizing name suits it well. This bread, with its slightly crumbly, dense yellow crumb and specks of corn kernels and green onions, is very delicious with various spreads, smoked bacon, ham, or simply with good butter and a bit of salt. You could also make a cheese sandwich, of course, but there is already cheese inside – and that makes our bread special.

Step 1

Finely chop the green onions. Mix onions with corn kernels.

Melt the butter and cool slightly. Add eggs and salt to the butter, beat until smooth. Add sour cream and honey, beat again.

In a large bowl, combine cornmeal, flour, baking soda, baking powder and spices. Add the egg mixture, mix until smooth, but do not knead for too long - just until all the dry part gets wet. There should be some lumps left.

Stir grated cheese and corn mixture into dough. Leave for 20 minutes at room temperature.

Line a rectangular cake pan with greased parchment paper. Preheat the oven to 180°C. Place the dough in the mold and smooth it out. Place in the center of the oven and bake for 45 minutes (cover the pan with foil for the last 15 minutes to prevent the top from burning). Cool the bread on a wire rack.
