If you want to try Adjarian khachapuri according to the classic recipe, then you should do so in Batumi. What should real cheese pies be like? The locals describe them as follows: golden brown, with crispy edges, a dry bottom, and a soft crumb. Inside, they are generously filled with melted cheese, mixed with a piece of butter melting from the heat – all of which stretches and soaks the slices of dough. The egg here is both food and decoration; it must be the freshest, farm-sourced, with a bright yolk. The right khachapuri is, above all, about the cheese. And not sulguni as is commonly believed, but chkineti-kveli – young Imeretian cheese, squeaky, tender, with a buttery flavor.

Prepare all the ingredients for preparing Adjarian khachapuri according to the classic recipe. Sift the flour through a sieve. Combine 500 ml of warm water and warm milk in a bowl, add yeast, sugar, salt, vegetable oil, pour into flour and knead into a loose dough. Cover the bowl with a towel and place in a warm place for 1.5 hours.
Then, when the dough rises and doubles in volume, punch it down, wrap it again and put it in a warm place for 1.5 hours. It should increase in volume by 2 times.
Grate the cheese on a coarse grater, mash it with your hand, add 100-200 ml of boiled chilled water, stir until you get a thick cheese paste.
Divide the dough into balls, weighing approximately 200 g. Sprinkle the work surface with flour. Roll each into a small circle. Stretch it and form an oval. Fold the edges of the dough inward to form a boat. Pinch the ends. Pour a ladle of cheese inside. So make all the khachapuri.
Preheat the oven to 250-260 °C. Grease a baking sheet with vegetable oil or line it with parchment. Spread the khachapuri on it and bake for about 15 minutes.
When the sides of the “boat” are browned, take out the baking sheet and beat one raw egg into the khachapuri. Then return them to the oven for 1-3 minutes.
Transfer the finished khachapuri to a dish and add a piece of butter to it. Serve hot with tea, coffee, cocoa, lemonade or sparkling water.
