They have a long shelf life and are easily transformed into jams, preserves, fruit drinks, and cocktails, providing that energy boost needed to overcome the seasonal blues. One such antidepressant is the orange, slightly bold sea-buckthorn. If you have ever tried to pick it with bare hands, you surely understand what I'm talking about. Step 1

1. First of all, you need to prepare two types of puree - apple and sea buckthorn. To do this, cut sour green apples (about 0.5 kg) in half and remove the cores, bake in the oven. Then put in a bowl, punch with an immersion blender and rub through a sieve. Heat sea buckthorn berries (about 150 g) in a saucepan with 1 tbsp. sugar, then beat with a blender and rub through a sieve. This way we will get two types of fruit puree. Place the puree in the refrigerator for several hours.

2. In a bowl, mix the required amount of chilled applesauce, sugar and egg white. Beat everything into a fluffy stable mass.

3. Mix sugar, agar-agar and water in a saucepan. Bring the mixture to a boil and, with continuous stirring over medium heat, boil the syrup for 4 minutes, from the moment it boils... until tested on a thin thread flowing from a spatula. This is an indicator of the readiness of the syrup. Remove the finished syrup from the heat and let stand for half a minute so that the bubbles “calm down.”

4. Heat the required amount of sea buckthorn puree in the microwave until slightly warm.

5. Continue beating the applesauce with the mixer, at low speed and at the same time pour in the hot syrup in a thin stream, being careful not to let the syrup get on the mixer beaters. Then, increasing the speed of the mixer, beat the marshmallow mass for half a minute.

6. Add warm sea buckthorn puree to the marshmallow mass and continue beating the mass for a minute, until clear marks appear from the mixer whisks.

7. Quickly transfer the finished mixture into a pre-prepared pastry bag with a nozzle and immediately place the marshmallows on the prepared mat or baking paper. Marshmallows stabilize within several hours at room temperature.

8. Glue the finished marshmallow halves in pairs and roll in powdered sugar. Store in a closed container. Unusual, tasty, moderately sweet, with a slight sea buckthorn sourness, marshmallows are ready!
