The best way to preserve juicy ripe nectarines for the winter is to make seedless jam from them. This sunny treat will be a wonderful addition to cheese pancakes, fritters, and crepes. It's also delicious just with tea. The preparation turns out to be aromatic and quite sweet. Choose ripe, but rather firm, undamaged fruits. They will better retain their shape, their golden color, and will be soaked in sweet syrup. No special culinary skills, dishes, or equipment are required to make the jam, and it won’t take much time either. So, stock up on juicy and ripe nectarines and start cooking!

Prepare all the ingredients to make seedless nectarine jam. Rinse the fruits and dry. Use a knife to make a cut lengthwise and remove the seeds. Cut the pulp into pieces.
Place the nectarine pieces in a saucepan and cover them with sugar. Shake the container several times to ensure the sugar is evenly distributed throughout the fruit. Leave for 2 hours so that they release juice.
Rinse jars and lids thoroughly with baking soda, and then sterilize in any convenient way. For example, over steam, in an oven or microwave. Dry.
Place the pan on the stove and heat over medium heat, stirring with a wooden spoon, for about 10 minutes. The sugar should dissolve completely. Remove from heat. Cool.
Then return the pan with nectarines to the stove and bring to a boil. Switch the heat to medium and, stirring with a spoon and skimming off the foam, cook for another 15 minutes. Remove from heat. Cool.
Return the pan to the stove for the last time and cook, stirring and skimming, for another 15 minutes over medium heat. Distribute the jam into sterilized jars and seal with lids. Turn upside down and cool.
