While the pasta cooks, you can easily make the sauce, as spinach doesn't require long cooking. Then just combine everything, heat it up, and serve, sprinkled with grated cheese and pine nuts. Toast the pine nuts in a dry frying pan and let cool. Cook the pasta in plenty of boiling salted water until tender, according to package instructions.
While the penne cooks, prepare the sauce. To do this, sort the spinach and remove any rough stems. Rinse the leaves thoroughly with running water and drain in a colander. Cut large ones.
Place the prepared spinach in a saucepan, add boiling water and cook over high heat for 2 minutes. Drain in a colander and let the liquid drain. Place in a deep non-stick frying pan.
Pour cream over spinach in skillet. Place on the fire and quickly bring to a boil. Season with nutmeg, salt and pepper to taste.
Reduce the heat under the frying pan to low. Cook for 5 minutes, stirring occasionally. Drain the cooked pasta in a colander, then add it to the creamy sauce with spinach and heat everything together. Divide the hot spinach pasta into serving bowls. Sprinkle with cheese and nuts.
