The secret, of course, lies in the cottage cheese, which makes the kolobki very tender, with a light and pleasant milky tang. You can use cottage cheese of any fat content. If you want to save on calories, you can even use fat-free cottage cheese, but is it worth deceiving yourself? Deep-fried donuts will still be quite calorie-dense, and these airy balls with a crispy crust disappear unnoticed, "like sunflower seeds." It's no coincidence that we make them small, literally bite-sized. It's impossible to resist!

Mix cottage cheese with eggs, sugar and salt in a deep bowl using a mixer. Add soda to the flour and gradually add it to the curd mixture, continuing to beat the mixture until smooth. You should get a viscous, not very dense dough.

Place a thick-walled saucepan or sauté pan over medium heat. Pour vegetable oil there. Preheat the deep fryer to a temperature of approximately 180ºC. You can check this by throwing a small piece of dough into the oil: if small bubbles immediately gather around it, then the frying is ready and you need to reduce the heat.

Lubricate your hands with vegetable oil. Pinch off a small piece of curd dough and roll it into a ball with a diameter of no more than 2 cm. Place the ball in the oil.

Working quickly, continue to form the balls and add them into the fryer in small batches: the curd balls will quickly begin to increase in volume and should not interfere with each other.

Fry each batch, stirring constantly with a slotted spoon to ensure they brown evenly on all sides. As soon as the curd donuts acquire an appetizing golden crust, remove them with a slotted spoon onto paper napkins and load the next batch.

Place the finished donuts with cottage cheese in a heap on a serving dish and sprinkle them evenly with powdered sugar - it is convenient to use a small sieve for this.
