Step 1

Place the processed cheese in the freezer for 20 minutes to make it easier to grate. During this time, prepare all other soup ingredients.

Peel, wash and cut the potatoes into cubes, place in a bowl and cover with cold water. Peel the onion and chop finely. Peel the carrots and grate on a coarse grater.

Cut the smoked sausage into small cubes. Heat oil in a saucepan. Add sausage to it and, stirring, fry for 5 minutes. Transfer the sausage to a plate. In the same pan, fry the onions and carrots for 5 minutes.

After this, pour 2 liters of hot water into the pan and place on high heat. When the water boils, add a little salt, add the potatoes and cook for 10 minutes.

Return the sausage to the pan. Cook over medium heat for 10 minutes. At this time, grate the processed cheese on a coarse or medium grater. Add to soup. Pepper it. Cook, stirring, 3 minutes.

Finely chop the parsley and place in a saucepan, stir. Turn off the heat under the pan, cover with a lid and leave for 10 minutes to allow the soup with sausage and cheese to simmer.
