We don't know if this dish can be called a cookie. Rather, these soft squares that smell of lemon zest and poppy seeds are more like a gingerbread. A sort of blonde gingerbread. They are perfect for an afternoon snack with a glass of soy milk for children or a cup of coffee for their parents.

Brown sugar - 1.5 glass
Peanut butter - 5 tbsp.
Lemon (juice and zest) - 2 pcs.
Poppy - 4 tbsp.
Baking powder for the dough - 1 tsp.
Salt - to taste
Refined vegetable oil for brushing eggs - to taste

Sift the flour into a bowl along with the baking powder and salt. Add sugar and chopped zest, stir.
In a small bowl, combine 1 cup warm water with lemon juice and oil. Add the resulting mixture to the bowl with flour and mix thoroughly so that there are no lumps.
Pour boiling water over the poppy seeds for 5 minutes, place in a sieve, shake off excess water and lightly pound the poppy seeds in a mortar. Add it to the dough.
Grease a rectangular pan measuring approximately 20x30 cm with butter. Pour the dough into it and place in an oven preheated to 160°C. Bake until a matchstick inserted into the center comes out clean, about 25 minutes.
Cut into portions, cool or serve warm.
