The process is not too complicated, and the result will definitely not disappoint (if, of course, you love seafood). And what's more, the soup turns out to be very filling, despite being cooked in water and not in broth. This effect is achieved thanks to the rice in the recipe and the thick texture of the dish. Cleaned mussels - 200 g
Rice - 100 g
Tomato - 4 pcs.
Onion - 1 pcs.

Basil (leaves) - 50 g

Prepare all soup ingredients. Peel the onions and carrots, chop thinly and fry in 2 tbsp. l. oil (7 minutes). Scald the tomatoes with boiling water, then plunge them into ice water and remove the skins. Wash the basil, dry it and remove the leaves from the branches.
Finely chop two tomatoes and half the basil leaves. Add to onions and carrots. Fry, stirring occasionally (6 minutes). Remove from heat and puree in a blender.
Pour the tomato puree into the pan. Pour in 500 ml of drinking water and bring to a boil, add salt. Reduce heat, cover the pan with a lid and cook over low heat for 10 minutes.
Heat the remaining vegetable oil in a frying pan and fry the rice in it (3 minutes). Add wine and sugar. Simmer uncovered for 5 minutes. Add rice to the soup pot. Cook for 10 minutes.
Remove seeds from remaining tomatoes. Cut the pulp into thin strips. Peel and chop the garlic. Cut the remaining basil leaves into thin strips.
Add mussels, tomatoes, garlic and basil to the almost finished soup. Bring to a boil over medium heat. Cook for 10 minutes. Pour into serving bowls and serve.
