Egg envelopes with cheese and ham will help you diversify your weekend breakfast. It's the same scrambled eggs, but with a hearty filling. In the middle of the egg envelope, slices of cheese and ham are wrapped. But with proper imagination, the filling can be changed as desired. Any sausage can be used instead of ham – smoked or doctor's sausage. And if you want a restaurant touch, add a slice of prosciutto. Hard cheese can be replaced with mozzarella or sulguni. Vegetables, such as bell peppers and tomatoes, can be added to the existing ingredients. And to serve it as in a restaurant, you should add a leaf of lettuce, cucumber slices, and a sprig of cilantro.

Prepare all the ingredients according to the list for egg envelopes with cheese and ham. Remove the eggs from the refrigerator until they are at room temperature.
Hard cheese is suitable for this recipe. Grate it on a fine grater into a separate bowl and put it aside for now. Cover the grated cheese with film to prevent it from drying out.
Choose any ham. Grate it on a coarse grater into another bowl. If it is too soft and breaks, you can simply cut it very finely with a knife.
Break the eggs into a small bowl, season with salt and pepper and stir until the whites and yolks are combined. It's best to do this with a fork.
Wash the dill sprigs and dry. Remove tough stems. Chop the leaves very finely and place in the egg mixture. Add Provençal herbs and stir.
Grease the frying pan with a thin layer of vegetable oil using a pastry brush. Pour in the egg mixture using a ladle and fry on one side for about 2 minutes. Carefully turn the resulting omelette over to the other side with a spatula and cook for another 1 minute.
Place grated cheese and ham in the center of the omelette. Wrap the omelette with an envelope (first fold the left and right edges to the center, press with a spatula. Then fold the top and bottom edges and press again with a spatula). Flip it over to the other side and cook for another 30 seconds.
Also prepare all the envelopes. Makes about 12 pieces, depending on the thickness of the omelette. You can serve it with fresh vegetables, garnished with any greens.
