Vinegar essence 70% - 1 tbsp.

Dry mustard - 1 tsp.
Salt, ground hot red pepper - 1 tsp.
Ground black pepper - 1 tsp.
Ground nutmeg - 0.3 tsp.

To make Italian tomato sauce for the winter, wash the tomatoes well, cut them into pieces and remove the stems. Peel the garlic.
Grind the tomatoes and garlic through a meat grinder or puree them using a food processor. Crush the cloves and allspice in a mortar. Coarsely chop the basil leaves.
Place all sauce ingredients except vinegar essence in a saucepan. Place on the fire, bring to a boil and simmer over low heat, stirring, for 2.5 hours. For 10 minutes. Before the end of cooking, pour in the vinegar essence.
Pour the hot sauce into hot sterilized jars, seal with sterilized lids, turn upside down and leave to cool completely.
