Place the chili on a large tray and let it dry in the shade for 3 days. Then lubricate your hands with vegetable oil or put on gloves and remove the stalks.
Boil vinegar and cool. Scroll all prepared products through a meat grinder or grind in a food processor, mix thoroughly with a wooden spoon.
Add coriander and salt, pour in the bite and leave to infuse for 2-3 days, stirring the adjika from time to time. Place in jars, pour a thin layer of vegetable oil on top and close. Store in a cool, dark place.
