You can make both hot and cold soups from young zucchini. They turn out very tender and delicious and don't require any special additions except potatoes and onions. All you need to do is to lightly sauté all the vegetables, add water or broth if available (chicken, vegetable, or mushroom broth will do), cook for a bit, blend with a blender, and add cream to taste.

Peel and finely chop the onion and garlic. If desired, peel the zucchini and cut into small pieces. Finely chop the greens.
Heat the oil in a large, thick-bottomed saucepan, add the onion and fry for 5 minutes.
Add zucchini with garlic and fry over medium heat for 5 minutes. Add salt, pour in 2 cups of hot water, bring to a boil, cover with a lid and cook for 10–15 minutes. The zucchini should become soft.
Add the greens to the pan after 1 minute. Remove from heat and blend soup with a blender.
Add as much cream as you like in terms of consistency and taste, season with pepper and beat again. Serve the soup hot or cold.
