Grind the berries or fruits in a blender into a puree along with drinking water. If necessary, strain through a sieve to remove small berry seeds.
Mix the puree with 250 ml simple sugar syrup until smooth. Take a jug (measuring or water) and pour this mixture into it.
To determine the ideal density of the mixture, you will need an egg. You can pour boiling water over it or hold it in water heated to 70 ° C for 3 minutes. (this is for food safety). Place the egg into your sorbet mixture. Most likely it will drown. Start adding syrup little by little. As soon as the egg floats to the surface so that a section the diameter of a ruble coin appears, you have reached the correct consistency and can be frozen. Remove the egg, of course.
Transfer the mixture to an ice cream machine and freeze according to instructions. If you don't have a machine, place the mixture in a freezer container, seal tightly and place in the freezer. The sorbet will take approximately 4 hours to freeze, during which time it needs to be frozen every 15-20 minutes. Take it out of the freezer and beat it with an immersion blender until it is smooth and free of ice crystals.
