You won't really surprise anyone with rice and greens. Usually, greens are sprinkled on top — but here they simply used about 10 times more, that's all. But the main star of this dish is the avocado! Luxurious, smooth, like a creamy sauce that makes the rice tender and incredibly delicious.

Greens (onion, parsley, cilantro, dill, basil) - 100 g

Pour the rice into a large saucepan, place over high heat, add salt, and pour in 350 ml of boiling water. Stir, close the lid tightly, after 1 minute. Reduce heat to low and simmer without uncovering for 20 minutes.
Meanwhile, chop the greens with peeled garlic as finely as possible, add salt and chop a little more.
Wash the lime with a brush, dry it, remove the zest with a fine grater. Squeeze the juice out of the lime.
Peel the avocado, remove the pit, chop the pulp and place in a blender. Pour over lime juice, pour in 50–70 ml of cold water, add a little salt. Grind into puree with a blender. If it is very thick, add water little by little. You should get a runny sauce. Season the sauce with zest and pepper.
When the rice is cooked, stir in the chopped herbs and butter. Divide rice among bowls and top with avocado sauce.
