Perhaps you have never prepared mackerel skewers before, but if you do it once, you will be pleasantly surprised by its exquisite taste and pleasant firm texture. Although, when you think about it, choosing such a fish for grilling over an open flame is quite obvious: it is fatty and tender. True, some people don't like the strong smell of mackerel, but this problem can be easily solved by marinating it for a long time with lemon juice, onions, and garlic. After that, you just need to skewer the pieces of fish and grill them over the barbecue until fully cooked (spoiler: it will take just over five minutes!).

Prepare all ingredients. First of all, make the marinade for the mackerel kebab. To do this, peel the onions and cut into rings. Peel the garlic cloves and cut into slices.

Wash and cut the mackerel: cut off the tail, fins and head. Remove the backbone and bones, as well as the entrails. Rinse the fish flesh thoroughly and dry thoroughly.

Place the onion in a large mackerel marinating bowl. Cut the fish into thick pieces and place skin side down on top. Sprinkle with salt, sugar and fish seasoning (to taste).

Place slices of garlic on each piece of mackerel, sprinkle with lemon juice and vegetable oil. Cover the top of the bowl with mackerel in the marinade with cling film. Place in the refrigerator for half an hour.

Light the coals in the grill and let them burn well until white ash appears on the surface. Pat the mackerel pieces dry with paper towels and thread them onto skewers, alternating with cherry tomatoes and onion rings.

Grill the mackerel kebab on the grill over burnt coals for about seven minutes. The skewers should be turned over a couple of times during this time. Serve the kebab immediately.
