Spicy eggplant caviar is a variation on the classic appetizer. The spiciness in this dish can be achieved in different ways. You can add raw hot pepper pods to the standard ingredients, or you can add already processed pepper (for instance, ground or flakes). Choose more or less hot pepper varieties according to your taste.

Dill - 100 g
Refined vegetable oil - 500 ml
Table vinegar 9% - 200 ml
Sugar - 4 tbsp

Peel the garlic. Remove seeds and stems from sweet and hot peppers. Cut the greens. Cut off the stems of the eggplants. Boil the eggplants in boiling water for 5-8 minutes. Cool and peel off the skin.
Pass all the vegetables through a meat grinder, add the greens and mix. Mix all the ingredients for the marinade and bring to a boil. Pour the hot marinade over the vegetables.
Place the caviar in sterilized jars and cover with lids. Place the jars in a saucepan with hot water (the water should reach the “shoulders” of the jar).
Bring the water in the pan to a boil and sterilize the jars for 10 minutes. Carefully remove one jar at a time and roll up the lids. Turn upside down and leave until completely cool.
