Perch is one of the most accessible types of high-quality sea fish available in our stores. Most likely, you will purchase frozen perch. To ensure it tastes no different from fresh perch, you need to thaw it properly – that is, slowly, in the refrigerator (this will take about a day). If you don't have that much time, absolutely do not use the microwave – it will partially cook the fish edges during the thawing process. Instead, fill a pot with ice-cold water and dissolve a lot of salt in it – enough so the water tastes like seawater. Submerge the fish in it, and it will thaw in just a couple of hours.

Preheat the oven to 200°C. Line a baking sheet with parchment. Salt and pepper the perch on all sides.
Crush the garlic, peel and chop. Finely chop the greens (you can save a few beautiful leaves for serving). Mix the herbs and garlic, add salt and chop everything together as finely as possible. Set aside 2 tsp. of this mixture, mix the remaining with vegetable oil.
Soften the butter and mix with the reserved garlic-green mixture.
Peel the potatoes and cut into very thin circles. Place the potato slices on the prepared baking sheet in overlapping layers, coating with vegetable oil, garlic and herbs. Place in the upper third of the oven for 15 minutes.
Reduce oven temperature to 160°C. Place the perch on the potatoes. Spread the perch with butter, herbs and garlic. Return the pan to the oven, positioning it in the lower third, and bake for 15–20 minutes, depending on the thickness of the fish.
