Pork stew is quite justified as a dish, although many believe that only beef or lamb is acceptable in this dish. The reason for such categorization is the belief that it belongs to Tatar cuisine, although there is no direct evidence of this. However, there is a French version! According to it, stewed finely chopped meat with gravy in the country that sets culinary fashion trends was called au jus a la tartar. The last word, unfortunately, means "barbarian." In Russia, this name was liked, but it ended up sounding like "azu a la Tatar." Do you feel the difference? In general, this is approximately how azu became "Tatar." What's good about this dish? The fact that, unlike beef stroganoff, it is made from cheaper cuts of meat, yet it turns out very tasty. We tried using pork as the base and found that it works wonderfully. Pork pulp - 500 g
Potato - 400 g
Onion - 150 g
Garlic - 3 clove
Chilli - 1 pcs.
Canned tomatoes in their own juice - 300 g
Pickle - 300 g
Refined vegetable oil - 2 tbsp
tomato paste - 2 tbsp
meat broth - 250 ml
Parsley - 3 bunch
Ground black pepper - to taste

Wash the pork, dry it well and cut into strips. Peel the onion and garlic. Cut the onion into half rings, chop the garlic. Chili pepper, remove seeds, finely chop.
In a large heavy-bottomed saucepan, heat 2 tbsp. l. vegetable oil. Add onion, garlic and chili pepper. Stirring, fry over medium heat for 5 minutes. Add chopped pork. Cook over high heat, turning frequently, 5 to 7 minutes.
Coarsely chop the peeled tomatoes or puree them in a blender. Cut the pickled cucumbers into thin strips. Peel the potatoes, wash them, cut them into small slices.
Add tomatoes, cucumbers, and tomato paste to the saucepan with vegetables and pork. Simmer over low heat for 10 minutes. Pour in the broth, salt and pepper. Simmer over low heat, covering the saucepan with a lid, for 30 minutes.
Lightly fry the potatoes in a frying pan in the remaining oil, stirring occasionally. A light crust should form on it. Wash the parsley, dry and finely chop.
Transfer the potatoes and parsley to the pan with the pulled pork. Stir gently and cook for 3 minutes over medium heat. Serve the pork aza immediately.
