Slice small zucchini lengthwise into slices. Brush with olive oil, add salt and fry very quickly in a non-stick frying pan just until the zucchini becomes soft. Place cooked zucchini on paper towels.
For the cheese filling, grind the peeled garlic with chopped parsley into a paste and mix with the cheese.
For the curd filling, grind the peeled garlic with chopped sun-dried tomatoes into a paste using an immersion blender, mix with the cottage cheese, and pepper.
Coat each piece of zucchini with one of the fillings, roll it into rolls and place it vertically. Serve after letting it sit for a while in the refrigerator.
