Prepare the plums. Wash the fruits and cut each into quarters. Remove the seeds. Place the plum pulp in a thick-bottomed saucepan and place over medium heat.
Bring the plums to a boil, covering the pan with a lid. Stir and cook over low heat for 15 minutes. Remove from heat and puree using an immersion blender.
Add sugar to the pan with plum puree and stir. Place on the fire and bring to a boil. Skim off the foam with a spoon. Reduce heat to low. Cook the jam for 2 hours, stirring every 15 minutes.
Pour the hot plum jam into dry, sterilized jars and roll up. Turn out onto a double folded towel and let cool completely. Store in a dry, dark place.
