If you have never made quick lentil curry, then this recipe is for you. Curry is a very popular vegetarian dish in India, where it is prepared everywhere. In addition to the main ingredient (lentils), it also includes the main spice - curry, from which this specialty gets its name. Overall, the curry recipe is very simple and quick to prepare. Half an hour of cooking, and a family lunch or dinner is ready. You can serve lentil curry with flatbreads, sprinkled with herbs to your taste.

Preparation steps

Step 1

Soak lentils in cold water for 10 minutes. Meanwhile, peel the onion and cut into very small cubes.

Peel the ginger, cut lengthwise into thin slices. Then cut them lengthwise into strips and, finally, crosswise into very small cubes. Crush, peel and chop the garlic.

Heat a little oil in a frying pan with a thick bottom, add cumin and mustard seeds, fry, stirring, for 1 minute.

Add onion, ginger and garlic to the pan. Cook, stirring frequently, until onion is soft (heat over medium-high), about 3 minutes.

Add curry powder to the vegetable mixture and stir. After 15 sec. add tomato puree; cook, stirring, 1 minute. Drain almost all the water from the lentils, place the lentils along with the remaining water in the pan. Bring to a boil, cook for 4-5 minutes.

Pour in coconut milk, add salt and mix thoroughly. Cook over high heat until the lentils are tender, about 7 minutes. Sprinkle with herbs and serve with rice.
