A lavash roll with tofu and vegetables will appeal to vegetarians, people who are fasting, and everyone who loves delicious and healthy food. We are also confident that this recipe will be appreciated by gourmets who value simple yet original and richly flavored dishes. To make the roll, you will need round lavash, tofu, vegetables, and plenty of greens. For the filling, we added red cabbage, fresh tomatoes, carrots, and soy cheese, which we separately prepared in an aromatic breading of breadcrumbs with spices. And, of course, we added a sauce, without which the lavash with such a filling would not be so juicy and tender.

red cabbage - 120 g

Tofu - 300 g
Panko bread crumbs - 50 g
Corn starch - 2 tbsp
Soy sauce - 1 tbsp
dried garlic - ½ tsp
Paprika Santa Maria smoked - ½ tsp
Vegetable oil - 3 tbsp
Camelina oil - 2 tbsp
Dijon mustard - 1 tbsp
Pork medallion - 1 tsp
Apple cider vinegar 3% - 1 tbsp

Finely chop the cabbage. Grate the carrots. Cut the tomatoes into slices. Remove the stems and finely chop the parsley, cilantro and dill leaves.
Prepare honey mustard sauce. Combine camelina oil, Dijon mustard, honey and apple cider vinegar, add salt and stir.
Cut the tofu into 8 x 1 cm pieces. In a small bowl, mix soy sauce and starch, add 1 tbsp. l. water and stir with a whisk. Pour breadcrumbs into a plate and mix with smoked paprika and garlic powder
Dip the tofu slices into the starch mixture and roll in breadcrumbs. Heat vegetable oil in a large frying pan and add tofu. Fry over medium-high heat until golden brown, about 1 minute per side.
Place the pita bread on a work surface, arrange cabbage, carrots, tomatoes in rows, sprinkle with herbs and pour over the sauce. Add tofu. Fold two opposite sides of the pita bread over the filling, then roll it into a tight roll. Serve immediately.
