Apricot porridge is more like a dessert than a porridge per se. However, whatever you call a dish with a pronounced fruity flavor and aroma, it will be an excellent choice for those who love to experiment with new tastes and textures. Everything in this porridge is impressive: the main ingredient - dried apricots, and the dressing with flaxseed urbech. But that's not all. We will add a handful of seeds, honey, and olive oil to the porridge to give it a perfect taste, making the recipe a part of your collection of not only the most original but also the most wholesome dishes.

For the dressing, combine urbech, honey and both types of oil and mix until smooth (the honey can be slightly warmed).
Soak the dried apricots after 10 minutes. rinse, add 1 liter of cold water, bring to a boil, cook for 10 minutes.
Beat the dried apricots together with the broth in a blender into a puree, pass through a sieve. Add flour and sugar, mix thoroughly with a whisk.
Bring the resulting mass to a boil over high heat, stirring constantly, then reduce the heat and simmer, stirring for 5 minutes. Remove from heat and stir for another 1 minute.
Divide the dried apricot porridge among plates, place a spoonful of urbech and butter in each. Garnish with dried apricots and seeds.
