This dish not only provides a boost of energy but also brings a great mood, which, you must agree, is very important. And who knows, good grades at school might not be far behind! For moms, kefir pancakes are a real find: they are simple and quick to make (you can shorten the "resting" time of the batter by using warm kefir instead of cold). By the way, if you wish, you can reduce the amount of sugar in the batter to a symbolic teaspoon: this way, the pancakes can be served not only with sweet fillings but also, for example, with melted cheese or liver pâté.

Prepare dough for pancakes with kefir. To do this, remove all the ingredients from the refrigerator and leave them on the table. They must have the same temperature. In a large bowl, beat the egg and sugar until fluffy. Without stopping whisking, pour in the kefir.
In a separate bowl, mix flour with baking soda and salt. Pour the flour mixture into the egg mixture and mix thoroughly. Cover the bowl with pancake batter with a towel and leave in a warm place for 20-30 minutes.
Heat a cast-iron frying pan high, lightly grease it with oil, and spoon out the dough by the tablespoon without stirring it. Bake the pancakes over medium heat. Place the finished pancakes in a bowl or pan with a lid. Serve hot.
