Lentil salad with squid is very hearty thanks to its high protein content in both lentils and squid. This unique dish is perfect not only for a regular lunch or dinner but also for a festive table. We will explain and show step by step how to prepare this salad in the recipe. We chose canned squid for it - they have a more intense flavor, and it will be enough to simply drain the liquid. If you prefer fresh or frozen squid, boil it until done and cut it into rings. Lentil salad with squid can be served either hot or cold. It goes well with fresh vegetables and greens, and instead of mayonnaise, you can use Greek yogurt for dressing.

Green beans - 200 g

Soak the lentils for 2 hours, then add fresh cold water, bring to a boil and cook until soft, 30 minutes.
Drain the squid in a colander, cut into easy-to-eat pieces and mix with mayonnaise and adjika.
Boil the beans in boiling salted water until soft, 5–7 minutes.
Hard boil the eggs, peel and cut into quarters. Chop the parsley.
Combine the lentils, beans and parsley in a large bowl and toss with the squid sauce, seasoning with salt and pepper if necessary. Garnish the salad with eggs and serve.
