The simplest recipe for cooking cod in the oven with onions will require minimal effort from you, as the oven will do almost all the work. The most difficult part of this recipe is slicing the onions into thin half-rings, but you don't even need to make them very thin. In the given time, the onions will become soft and sweet. All you need to do is place the cod on the onions and bake everything together in the oven. Such an “onion pillow” will be a wonderful side dish for the cod fillet. Additionally, you can serve fluffy boiled rice or a fresh vegetable salad with the fish.

Preheat the oven to 220°C (preferably convection). Line a deep baking tray with baking paper. Season the fish with salt and pepper on all sides and let sit for 15 minutes.
Peel the onion and cut into thin half rings. Place on a prepared baking sheet, season with salt and pepper, pour in vegetable oil, stir and spread in an even layer.
Place the baking sheet with the onions in the top of the oven and bake until the onions are golden, 15 to 20 minutes.
Remove the pan from the oven, sprinkle the onion with paprika, and stir. Make indentations for 4 pieces of fish and lightly bury them in the onion.
Return the pan to the oven and immediately reduce the temperature to 170°C. Bake for 12–20 minutes, depending on the thickness of the fish.
