What could be better than a fluffy, fragrant cabbage pie? Only a pie made with tender and juicy young cabbage! Its taste is truly very different from the usual, from that very white cabbage which can be bought at any time of the year, so don't miss the opportunity and make this pastry in summer. Green onions, parsley, and dill will make a great addition to young cabbage: they will endow the dish with a special freshness and aroma. Eggs in the cabbage pie filling are also absolutely necessary—to give the filling a delicate creamy texture.

For the cabbage pie dough, mix flour, sugar, soda, salt and chopped butter into crumbs. Then add eggs and kefir (sour cream), knead a soft dough. You may need to add a little more flour. Place in the refrigerator while you make the filling.
To fill the pie, thinly slice the cabbage, removing the stem. Lightly rub the cabbage with salt and leave for 20 minutes. Finely chop all the greens.
Boil 3 hard-boiled eggs, cool, peel and chop not too finely. Drain any juice from the cabbage.
Soften the butter to room temperature. Beat the white of 1 egg into a thick foam. Add chopped greens, onions, eggs, softened butter and whipped egg whites to the cabbage. Add salt if necessary. The cabbage filling for the pie is ready.
Divide the pie dough into two parts, one of which should be slightly larger. Roll out the majority of the dough, taking into account the edges, and place on a greased baking sheet.
Place the filling and cover with the second part of the dough, pinch the edges. Brush the cabbage pie with the remaining yolk and place in an oven preheated to 180°C for 30–40 minutes. Cool before serving.
