Turkey fillet with vegetables and dried fruits in the oven is a dish with an unusual and vivid flavor. Turkey breast is diet meat and quite simple in taste. Baked vegetables and dried fruits will help it shine with new colors. Cranberry sauce is traditionally served with turkey on Thanksgiving in the USA. In our recipe, the sauce will not be redundant either—it will add sweet and sour notes and pair beautifully with both the meat and the vegetables.

Peel 3 medium carrots and cut into 1 cm thick circles. Peel 1 large red bell pepper and cut lengthwise into 8 pieces. Peel 1 large white onion and cut into quarters or 8 pieces.
For the sauce, mix 200 g of cranberries with 100 g of sugar and 100 ml of drinking water. Bring to a boil and simmer covered for 10 minutes. Beat with a blender, carefully strain through a sieve, add salt and pepper. If desired, cook further to thicken the sauce.
Salt and pepper 2 small turkey breast fillets and fry on all sides in olive oil until golden brown. Place the prepared vegetables in a heat-resistant baking dish, add about 200 g of dried fruits (figs, dried apricots, prunes) and a few sprigs of fresh thyme. Fill halfway with chicken broth. Bake vegetables and dried fruits in an oven preheated to 180°C for 20 minutes. Transfer the roasted turkey to the pan with the vegetables and bake for about 10 minutes until the turkey is cooked through. Serve with cranberry sauce.
