To make fluffy buckwheat porridge, you don't need to be a culinary genius: it's enough to know and follow two simple rules. The first is to maintain the proportions. That is, take 2 parts of water for 1 part of buckwheat groats. The second rule is to cook, or rather simmer the porridge in a pot with a lid on, without stirring. If you do everything correctly, the cooking process will be as simple as possible, and the result will be predictably good. Prepare buckwheat. Spread it on a table lined with a large sheet of white paper and sort through it, removing any debris. Then pour into a large saucepan.
Pour cold water over the buckwheat in a saucepan and rinse with your hands. Place on a sieve. Place back into the pan, cover with water and rinse. Repeat the process until the water runs clear. Dry on a paper towel.
Transfer the buckwheat to a large hot frying pan (without oil) and, stirring, fry over medium heat for 5 minutes until a characteristic aroma appears.
In a saucepan with a capacity of about 1 liter, bring 420 ml of drinking water to a boil over high heat. Add a little salt (about a level teaspoon) and stir.
Add prepared buckwheat to a pan of boiling water. Bring to a boil, remove the foam with a slotted spoon. Reduce heat to low. Simmer the buckwheat under the lid for 20-25 minutes. Don't mix! Add butter to the prepared buckwheat.
