To prepare apple compote from fresh apples, any type of apple will do. However, it is best to choose sweet and sour varieties. In our step-by-step recipe, we'll show you how to make a delicious drink in 40 minutes. It’s better to use small apples for the compote; they are easier to place in jars. We will enhance the flavor of the apples with spicy cloves and lemon juice. If you don't like the rather sharp taste of cloves, you can replace them with cinnamon. This will result in a completely different, but still very delicious drink. We'll use not only the apples but also the peel. We will cook a flavorful, rich syrup from the peel, which we will pour over the apples. Then we will sterilize the jars with the compote to preserve as many vitamins as possible from these valuable summer fruits.

Prepare all ingredients according to the list for apple compote from fresh apples. Wash the lemon and then pour boiling water over it. Extract the juice by hand or using a juicer.
Wash the apples, peel them (put the peels in a separate container). Cut the fruit into quarters and remove the core. Place the apples in a bowl, sprinkle with lemon juice, stir, cover and set aside for a while.
Place the peel in a saucepan, pour in 1.5 liters of water and bring to a boil. Add sugar, stir and cook for 5 minutes. Remove the pan from the heat. Strain the hot syrup through a sieve.
Place the apples in a clean, dry jar. Pour in the hot syrup, cover and let sit for about 10-15 minutes. Carefully pour the syrup into a saucepan and bring to a boil.
Pour boiling water over the clove buds and place them in a jar of apples. Pour enough boiling syrup into the jar so that it does not reach the top by 1.5–2 cm.
Take a large saucepan. Place a towel on the bottom and place the jar. Fill the jar up to the hangers with boiling water and sterilize for 20 minutes. Then seal with a lid, turn upside down and let cool to room temperature. Store in a dark place.
