To make your favorite salads even tastier, prepare homemade mayonnaise for them in a blender. This dressing will literally take your dishes to a new level! It should be noted that our version of the sauce is different from the classic one: it includes whole eggs rather than just yolks. Whether this is better or worse is up to you to decide. The main thing is that the eggs are the freshest, highest quality, ideally from free-range hens. From there, it's a matter of technique (quite literally): homemade mayonnaise in a blender is made in just a few minutes, to the delight of the busiest and most impatient!

Remove the yolks from the refrigerator and leave them on the work surface for 30 minutes. Do the same with vegetable oil if you suddenly store it at room temperature.
Measure out the required amount of lemon juice, sugar, salt and pepper for the mayonnaise. Place the yolks in a blender bowl or glass.
Add sugar, salt, pepper and lemon juice. Turn on the blender and blend the mayonnaise ingredients on low speed. After a couple of minutes, start gradually pouring in the vegetable oil.
When you add about half the butter, increase the beating speed. Continue adding oil. Use the blender until a mixture of homogeneous consistency forms in the bowl or glass.
Taste the prepared mayonnaise and, if necessary, add a little salt and pepper. Transfer the mayonnaise to a clean jar and put it in the refrigerator (can be stored for no more than 5 days).
