If your grandmother or mother made you potato patties with mushrooms when you were a child, you undoubtedly remember their wonderful, uniquely cozy taste, the tender texture, and the golden crispy crust. It was simply impossible to stop eating them! Today, potato patties with mushrooms appear on the table much less frequently because making such a dish requires time and certain skills. However, if you have a reliable recipe (like ours below) and a strong desire, everything will turn out perfectly! And be sure to get some good natural sour cream: with it, ordinary potato patties with mushrooms turn into a true culinary masterpiece.

Starchy potato varieties - 1 kg
Semolina - 2 tbsp
Corn starch - 2 tbsp
Extra virgin olive oil - 3 tbsp
Corn or wheat flour for dredging - to taste

Prepare the base of potato zrazas with mushrooms. Boil potatoes in their skins until soft. Run cold water over it, soak it a little and clean it. Grate and add salt.
Pour 3-4 tbsp semolina. l. potato broth and stir. Add the semolina mixture to the potato mixture, sprinkle everything with starch and mix thoroughly. Pour in the oil and stir again. Let the potato dough sit for 20-30 minutes.
Meanwhile, prepare the filling for zraz. Wipe the mushrooms with a napkin and cut into small cubes. Peel and finely chop the onion. Heat a little oil in a saucepan over medium heat, add the onion, and fry until golden brown, 7–10 minutes.
Add the mushrooms, increase the heat to high and cook until the liquid has evaporated. Season with salt and pepper. Stir and keep on fire for 1 minute. Let cool.
Using wet hands, form the potato dough into round shapes. Place some mushroom filling in the center and form into round cutlets. Dip them in flour and fry in oil, covered, until golden brown on both sides. Serve potato zrazy hot.
