Our friends, the Finns, love milk soups in general and fish soups with milk in particular. They have an enormous variety of salmon soups, and we barely managed to choose. However, no, it wasn't that difficult. This soup is tastier than all the others primarily because it includes smoked fish, which gives it an incredible aroma – somewhat rustic. It's as if we prepared it over a campfire. Serve the soup with rye bread, ideally Finnish.

Gutted salmon with head and tail (about 1.5 kg) - 1 pcs.
Hot smoked salmon - 200 g
Potato - 4 pcs.
Leek stem (white part) - 2 pcs.
Carrot - 1 pcs.
Celery root - 100 g
Salt - to taste
Milk or low-fat cream - 2 glass
Bunch of dill - 1 pcs.
Fennel - 1 pcs.

Cut off the head, tail and fins of fresh salmon. Remove the gills from the head and rinse well. Place the head, tail and fins in a large saucepan, add 2.5 liters of cold water, add salt, bring to a boil over low heat, skim off the foam and cook for 1 hour. Strain the finished broth into a clean saucepan.
Peel the fish itself from skin and bones, fillet it and cut it into 8 pieces. Cut smoked salmon into thin strips.
Peel the carrots and celery and cut into thin strips. Peel the potatoes and cut into quarters. Peel the fennel from damaged upper leaves and cut the pulp into thin slices. Cut the leeks into thin rings, wash and dry.
Place the broth over medium heat and bring to a boil. First add potatoes to the broth, after 10 minutes add carrots, celery and fennel, after another 5 minutes. - leek.
When the soup is almost ready, add the raw fillet and smoked salmon and cook for 5 minutes. At the very end, add cream and chopped dill. Add salt if needed. Bring to a boil, remove from heat. Cover with a lid and leave to stand for 5 minutes. Place a piece of fillet on each plate and pour in the soup with vegetables. Serve immediately.
