Cut the apples into quarters and remove the core. Place on a parchment-lined baking sheet. Cut the lemons into quarters and add to the apples. Drizzle with olive oil and season with salt and pepper.
Cut the cold butter into thin slices and place on a sheet of parchment lying on the board. Sprinkle the butter with salt and pepper and place in the freezer for 10 minutes.
Pat the chicken dry with paper towels. Carefully peel away the skin on the breast and legs. Place slivers of butter between the meat and skin. Season the chicken with salt and pepper.
Place rosemary and garlic in the chicken belly. Prick the skin on the abdomen with a skewer, tie the legs, and tuck the wings under the arms.
Place the chicken breast side down on top of the fruit. Bake in an oven preheated to 180°C for 40 minutes. Turn over and bake for another 20-30 minutes. Serve with fruit.
