Tofu tiramisu is a version of the classic Italian dessert that is suitable for vegans, those fasting, and those who do not consume gluten, sugar, dairy products, eggs, and other animal products. In general, it is the perfect dessert to please almost everyone. In our recipe, Savoiardi cookies are replaced with a sponge cake made from gluten-free flour and ground almonds with coconut oil and plant-based milk. Instead of mascarpone cream, we use whipped tofu with honey, but the coffee and cocoa remain in their traditional places.

Coconut flour Nutiva gluten free - 75 g
Vegetable milk - 60 ml
Ground almonds - 50 g
Honey or syrup - 6 tbsp
coconut oil - 3 tbsp

Preheat oven to 180°C. Line a square tin measuring 16 x 16 cm with baking paper. Melt and cool coconut oil. Pour 100 ml of boiling water over the ground coffee and leave to cool, then strain through a fine strainer.
In a large bowl, combine gluten-free flour, ground almonds, baking powder and salt and whisk to combine. Add vegetable milk, coconut oil and half the honey and mix with a mixer.
Pour the batter into the pan and bake on the middle rack of the oven for 15 minutes. Remove the pan and leave the cake in it for 15 minutes. Then transfer to a wire rack and cool completely.
Carefully squeeze the liquid out of the tofu block and pat dry with paper towels. Place tofu in a bowl and crumble. Add the remaining honey and beat with a mixer until smooth.
Transfer the cooled cake onto a board. Using a pastry ring, cut out 4 circles. Cut each circle in half lengthwise - you will get 8 pieces.
Place 4 cooking rings on a tray and place 1 cup of dough in each. Sprinkle with coffee, add 2-3 tsp. tofu cream, cover with the second circle of dough and brush with cream again. Remove the ring, sprinkle the tiramisu with cocoa and garnish with a cherry. Place tiramisu in the refrigerator and leave for 1-2 hours before serving.
